The recipe

With its origins in the Andean regions of South America this Quinoa Stew is a colourful and wholesome soup packed with fresh vegetables and of course a good helping of quinoa. The cheese topping is optional but adds a delicious extra dimension.


  • 85g quinoa
  • 250ml water
  • 1 large onion, chopped
  • 2 cloves garlic, crushed and chopped
  • 1 tbsp vegetable oil
  • 1 celery stalk, chopped
  • 1 carrot, thinly sliced
  • 1 red bell pepper, chopped
  • 1 courgette, cubed
  • 400g tin chopped tomatoes
  • 250ml vegetable stock
  • 2 tsp ground cumin
  • ½ tsp chilli powder
  • 1 tsp ground coriander
  • 2 tsp fresh oregano, chopped
  • salt to taste
  • grated cheddar cheese or similar


Step 1

Using a fine meshed sieve rinse the quinoa well with cold water. Place the quinoa and water in small saucepan, cover and cook on a medium-low heat for about 15 minutes until soft.

Step 2

Meanwhile place the onions, garlic and vegetable oil into a large saucepan, cover and sauté on medium heat for 5 to 8 minutes or until slightly caramelized.

Step 3

Add the celery and carrots to the saucepan and cook for an additional 5 minutes, stirring regularly.

Step 4

Add the bell pepper, courgette, tomatoes, and vegetable stock to the saucepan. Stir in the cumin, chili powder, coriander and oregano to the soup pot. Cover and simmer for 10 to 15 minutes until the vegetables are tender.

Step 5

Stir in the cooked quinoa and salt to taste. Top with grated cheese, if desired, and serve immediately.
