The recipe

Kulu Trout is a popular way to cook trout found in the rivers of the Kulu district, in the Indian state of Himachal Pradesh. These rivers flow through from the Himalayas on their way to the great River Ganges. The marinade adds a delicious tang to the subtlety of the fish.


  • 2 large trout fillets, cut into large pieces
  • 2 tbsp vegetable oil
  • For the marinade
  • 1 tsp ground coriander seeds
  • 1 tsp red chilli flakes
  • ½ tsp lemon rind
  • 2 tbsp lemon juice
  • 1 tbsp ghee
  • salt to taste
  • For the sauce
  • 1 medium red onion, finely chopped
  • 1 tbsp fresh coriander, chopped
  • ½ tsp mustard seeds
  • 2 tbsp lemon juice
  • 2 tbsp ghee
  • salt to taste


Step 1

Mix all of the marinade ingredients together and rub into the fish. Leave to marinate for about 15 minutes.

Step 2

Heat the oil in a frying pan and fry the marinated fish on a low-medium heat. Remove the fish from the pan and set aside.

Step 3

To make the sauce, heat the oil in a frying pan, add the mustard seeds and the onion and fry until soft and golden. Turn off the heat and then add the fresh coriander, lemon juice and salt to taste and mix in. Pour the sauce over the fish and serve hot with rice.
