The recipe

Green Couscous is an attractive and healthy addition to many meals and is quick and easy to make. It can be served as a cold salad and when warm it goes particularly well with our North African tagine recipes Mutton Tagine, Bean Tagine and Chermoula Fish Tagine.


  • 2 tbsp good quality olive oil
  • juice of 1 lemon
  • 4 spring onions, chopped
  • 25g rocket, chopped
  • ½ cucumber, cut in half lengthways, deseeded and chopped
  • salt and black pepper to taste
  • 160g dried couscous
  • 300ml boiling water


Step 1

Put the couscous in a bowl and add the boiling water. Cover the bowl with cling film and leave for 5-10 minutes.

Step 2

Meanwhile, whisk the olive oil and lemon juices together.

Step 3

Uncover the couscous and fluff up with a fork. Stir in the spring onions, rocket, cucumber and oil and lemon dressing. Serve hot or cold.
