Bulgur Wheat Pilaf

The recipe

Bulgur Wheat Pilaf is a wonderful mix of flavours and can be used as a side dish for a summery meal or eaten on its own as a light and refreshing snack served perhaps cold but preferably warm.


  • 90ml olive oil
  • 4 small red onions, thinly sliced
  • 3 red capsicum peppers, deseeded and thinly sliced into strips
  • 2½ tbsp tomato puree
  • 1 tbsp caster sugar
  • 2 tsp pink peppercorns
  • 2 tbsp coriander seeds
  • 100g raisins
  • 400g bulgur wheat
  • 400ml water
  • 3 spring onions, thinly sliced crossways
  • salt
  • black pepper


Step 1

Heat the oil in a large saucepan and add the onions and pepper. Cook gently for about 15 minutes until soft.

Step 2

Add the tomato puree, peppercorns and coriander seeds and stir while cooking for 2 minutes.

Step 3

Add the bulgur wheat and water, salt and pepper and stir while bringing to the boil.

Step 4

Once the mixture begins to boil remove the pan from the heat and cover with a lid. Leave for about 30 minutes.

Step 5

Separate the grains with a fork and add the spring onions before serving.
