Watermelon, feta and basil salad is one of the most refreshing of dishes. The colours are spectacular, as are the textures and flavours. It is ideal as a summer snack or as a delicious starter for a meal with family or friends.
- 500g seedless watermelon, diced
- 200g feta cheese, crumbled
- 20g pine nuts
- 20 fresh basil leaves
- 1tbsp olive oil
Dice the watermelon and crumble the feta and place into a bowl.
Gently dry fry the pine nuts for 2 minutes.
Place the pine nuts and whole basil leaves into the bowl and gently mix everything together.
Drizzle with the olive oil and serve.
