The recipe
Vegetarian cottage pie is a tasty and wholesome alternative to the traditional dish. It is fine served on its own or with any vegetable of your choice.Ingredients
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 3 large carrots, cut into 20mm chunks
- 2 tbsp thyme, chopped
- 350ml vegetable stock
- 400g chopped tinned tomatoes
- 400g green lentils
- 900g sweet potatoes
- 25g butter
- 85g cheddar style goats cheese, grated
- salt to taste
Method
Step 1
Heat the oil in a large saucepan and fry the onion for 10 minutes until soft and golden.
Step 2
In the meantime cook the lentils in a saucepan by covering them in water and simmering for 20 minutes until tender.
Step 3
To the onions, add the carrots, thyme, stock and tomatoes and simmer for 10 minutes.
Step 4
Add the cooked lentils and simmer for 10 minutes.
Step 5
In the meantime cook the peeled and diced sweet potato for 20 minutes until tender then mash and mix in the butter.
Step 6
Spoon the lentil mixture into a pie dish. Spoon the mash evenly on top and sprinkle the grated cheese to cover.
Step 7
Place in a preheated oven at 180°C and cook for 30 minutes until golden brown.
