A coulis is a thick sauce which is made from a purée of fruit or vegetables, either using raw or cooked ingredients and can be added to sweet or savoury dishes, hot or cold as required. Try this Tomato Coulis with our Vegetable Terrine.
- 675g ripe tomatoes
- 30g carrots, peeled and finely chopped
- 30g onions, finely chopped
- 1 tbsp olive oil
- 1 tsp caster sugar
- 1 bouquet garni
- salt and pepper to taste
Immerse the tomatoes in boiling water for about 10-20 seconds to loosen the skins and then plunge them into cold water. Deseed the tomatoes and chop finely.
Heat the oil in a saucepan and gently fry the carrot and onion until starting to brown and soften.
Add the tomatoes, sugar and bouquet garni to the pan and season with salt and pepper. Stir and bring to the boil, then simmer, covered, until the mixture has been reduced to a purée.
Pass the mixture through a sieve. To reduce and thicken the coulis, reheat in a pan. Season to taste and serve hot or cold.
