Spicy Vegetable Omelette2015-07-28

Omelettes are very popular in India, particularly for breakfast and have many variations. Some are just plain with a bit of salt, and others have varying combinations of tomatoes, red onions, cheese and green chilies.
This omelette is a little more Indian and spicy than many. It is also much thicker than a conventional omelette, more like a pie or a quiche without the pastry. Serve hot or warm with a salad of tomato and onion, drizzled with lime or with a green chutney.
- 450g courgettes, roughly grated
- 1 tsp salt
- 5 tbsp vegetable oil
- 2 small red onions
- 1 large potato, chopped into 1 cm cubes
- 2 small green chillies, finely chopped
- 2 medium tomatoes, chopped
- 1½ tsp ground cumin
- ¼ tsp chili powder
- ¼ tsp freshly ground black pepper
- 9 large eggs
- 3 tbsp coriander leaves, chopped
- ¼ tsp baking powder
Put the grated courgette into a bowl and sprinkle 1 tsp salt over it and mix. Set aside for 30 minutes. Sieve well while squeezing out the liquid.
Heat 3 tbsp of the vegetable oil in a deep non-stick frying pan. Add the onion and fry for 1 minute then add the potato and green chillies. Stir and fry for about 5 minutes, until the potatoes are just tender.
Add the courgettes, tomatoes, cumin, the remaining chilli powder (if using) and black pepper. Stir and cook for 2-3 minutes, until the tomatoes are soft. Set aside to cool.
Break the eggs into a bowl and beat well.
Add the cooled vegetables and the chopped coriander into the egg mixture and mix together. Add the baking powder, making sure it is well mixed into the vegetables and egg and that there are no lumps.
Wipe the frying pan with some kitchen paper and pour in the remaining 2 tbsp oil. Put on a low heat and when the oil is hot pour in the egg and vegetable mixture. Cover and cook on a low heat for 15 minutes. Remove the cover and carefully turn the omelette over by placing a large plate over the frying pan and turning it upside down. Then gently slide the omelette back into the frying pan to cook the other side. You may need to add a little oil to the pan if it is dry. Cook for 5 minutes and turn out as before onto a serving plate so that the newly cooked side is uppermost.
