The recipe

Spiced green beans and carrots is a very basic dish from Ethiopia but the use of spices and the Ethiopian spiced butter gives it some great flavours and the textures are really good.

Ingredients

  • 225g green beans, cut into small pieces
  • 300g carrots, cut into small pieces
  • 1 onion, finely chopped
  • 1 green capsicum pepper, cut into small pieces
  • 1 tsp fresh ginger, grated
  • 80ml Ethiopian spiced butter, (see recipe)
  • 1 tsp turmeric
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • 1 clove garlic, crushed and finely chopped
  • 500ml water
  • 1 tbsp vegetable oil

Method

Step 1

Boil 400ml of water in a saucepan and add the green beans and carrots. Cook until tender.

Step 2

In a saucepan add the oil and fry the onion until soft.

Step 3

Add the green pepper, ginger and spiced butter and fry together for 5 minutes.

Step 4

Add the turmeric, salt and pepper and fry for1 minute

Step 5

Add 100ml water and the garlic and bring to the boil.

Step 6

Add the cooked green beans and carrots and reheat while stirring gently. Serve
