Speculaas Biscuits

The recipe

Speculaas are spiced biscuits, mainly flavoured with cinnamon, which were traditionally baked in Holland and Belgium around the time of the St Nicholas’ feast on 5 or 6 December and would usually have an image or figure associated with St Nicholas stamped on the front of each biscuit. More recently speculaas tend to be eaten all year round, but are a particular favourite at Christmas.


  • 400g plain flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • 1 tsp ginger
  • ¼ tsp nutmeg
  • ¾ tsp ground cardamom
  • ¼ tsp ground mace
  • ¼ tsp ground cloves
  • 175g unsalted butter
  • 175g light brown soft sugar
  • 80ml water
  • flaked almonds for decoration


Step 1

In a bowl, combine the flour, baking powder, salt, cinnamon, ginger, nutmeg, cardamom, mace and cloves.

Step 2

Cream the butter and brown sugar until light and fluffy and then gradually fold in the flour and spice mixture, adding the water half way through. Mix until all the ingredients are completely combined. Divide the mixture into 3 and shape into discs about 2.5cm thick, wrap each one in cling film and refrigerate for at least an hour.

Step 3

Preheat the oven to 180°C/gas mark 4 and grease a baking tray.

Step 4

Take one of the discs of dough out of the fridge and place between 2 sheets of baking paper. Roll out until about 3 mm thick and cut with a biscuit cutter. Place on a greased baking tray and decorate with flaked almonds. Bake in the oven for 10-15 minutes and cool on a wire rack before serving. Repeat with the other dough discs.
