The recipe

Semolina with Cardamom and Sesame Seeds is a lovely breakfast, which is easy to digest.  For those with a knowledge of Ayurveda, the ancient Indian health system, it is fine for all three doshas, although suitable for Kapha types only when they are hungry, which isn’t always in the mornings, and then best made with rice milk or soya milk and a little less sugar. Drizzle with honey (Kapha dosha) or maple syrup (Vata and Pitta doshas).

Notes

Sesame seeds can be dry fried in a frying pan over a medium heat for 2 to 4 minutes, until they are beginning to brown.

Ghee is a clarified butter with the milk solids removed and recommended in Ayurveda.

Ingredients

  • ½ tsp ghee
  • 35g semolina
  • 100ml cow, goat, soya or rice milk
  • 100ml water
  • 1 tsp sugar
  • seeds from one green cardamom pod, ground
  • ½ tsp dry fried sesame seeds
  • a little drizzle of honey or maple syrup

Method

Step 1

Place the ghee into a small saucepan over a medium heat to melt.

Step 2

Add the semolina and stir for 3-4 minutes until the semolina has darkened a little. Add the water and milk and stir and then add the sugar and ground cardamom seeds and continue stirring for 2-4 minutes, until the semolina is soft and cooked. Add more milk and water if you wish, depending on the consistency you require.

Step 3

Pour into a bowl and scatter the sesame seeds over the top and then drizzle with a little honey or maple syrup.
