The recipe
These crispy rice doughnuts, Sel Roti, will satisfy the sweetest tooth. It is a traditional recipe prepared during the Tihar festival (Diwali in India) celebrated in October or November, but you could eat these at any time. You can add various spices such as cardamom or cinnamon, or add mashed banana and maybe serve them with yoghurt.

Ingredients
- 400g white long grain rice, washed and soaked overnight in cold water
- 2 tbsp ghee
- ¼ tsp baking powder
- Oil for deep frying
Method
Step 1
After soaking, drain the rice and grind in a food processor, adding sufficient water to make a smooth paste like batter. Add the ghee and baking powder and mix well.
Step 2
Heat the oil in a deep frying pan and using a cup pour about 60ml of batter in a ring shape into the hot fat. Fry on both sides until they are crispy and golden brown. Remove from the pan and place on kitchen paper to remove the excess oil. Serve hot or cold.
