Roast Carrots with Smoked Paprika is one of those versatile dishes that can be used as a hot or cold snack or served hot with a main meal. The sweet carrot flavours are balanced by the smokiness of the paprika giving a delicious twist to this quick and easy recipe.
- 1 kg carrots, sliced lengthways
- 2 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
In a bowl, combine all of the ingredients making sure the carrot slices are well coated.
Place the mix into a baking dish and cook in a preheated oven at 230°C /gas mark 8 for 25 minutes, stirring half way through. Serve hot or cold.
