The recipe

Persian Spice Mix is a typical mix for dishes from the area around the Persian Gulf.  It’s easy to make at home and should retain a good flavour for about 3 months if stored correctly. It is used in rice dishes or casseroles with pulses, meat and vegetables.  Variations may include black pepper, cloves, nutmeg or saffron.

Ingredients

  • 2 tbsp dried rose petals
  • 2 tbsp ground cinnamon
  • 2 tbsp ground green cardamom seeds
  • 1 tbsp ground cumin

Method

Step 1

Mix the ingredients thoroughly and store in an airtight container in a cool place out of direct sunlight.
