The recipe
Orange polenta cake is a lovely moist cake and the polenta gives it a great texture with a large crumb. If you wish you could also make this with lemon, instead of orange. It can also be made with plain flour, instead of the gluten free flour.Ingredients
- 250g unsalted butter
- 350g golden caster sugar
- 4 large eggs
- 140g fine polenta
- 200g gluten free flour
- 2 tsp gluten free baking powder
- Zest and juice of 2 oranges (save 100ml for the glaze)
Method
Step 1
Heat an oven to 160°C/gas mark 3
Step 2
Line the base and sides of a round 21cm cake tin with baking paper
Step 3
Cream 250g of the sugar and butter together until light and fluffy. Add the eggs, one at a time and mix thoroughly
Step 4
Add the polenta, flour, baking powder, zest and juice (reserve 100ml of juice) and mix thoroughly
Step 5
Put the cake mix into the cake tin and spread evenly
Step 6
Cook for about 45 minutes or until a skewer comes out clean when inserted into the centre of the cake. Remove from the oven and leave to cool for a couple of minutes, then turn out of the cake tin onto a wire rack to cool.
Step 7
To make the glaze, put the juice and sugar into a small saucepan and bring to the boil. Turn the heat down and simmer for 5 minutes. Remove from the heat and leave to cool.
Step 8
Drizzle the glaze over the top of the cooled cake and allow to soak in before serving
