Orange Polenta Cake2014-08-13

The recipeOrange polenta cake is a lovely moist cake and the polenta gives it a great texture with a large crumb. If you wish you could also make this with lemon, instead of orange. It can also be made with plain flour, instead of the gluten free flour.
- 250g unsalted butter
- 350g golden caster sugar
- 4 large eggs
- 140g fine polenta
- 200g gluten free flour
- 2 tsp gluten free baking powder
- Zest and juice of 2 oranges (save 100ml for the glaze)
Heat an oven to 160°C/gas mark 3
Line the base and sides of a round 21cm cake tin with baking paper
Cream 250g of the sugar and butter together until light and fluffy. Add the eggs, one at a time and mix thoroughly
Add the polenta, flour, baking powder, zest and juice (reserve 100ml of juice) and mix thoroughly
Put the cake mix into the cake tin and spread evenly
Cook for about 45 minutes or until a skewer comes out clean when inserted into the centre of the cake. Remove from the oven and leave to cool for a couple of minutes, then turn out of the cake tin onto a wire rack to cool.
To make the glaze, put the juice and sugar into a small saucepan and bring to the boil. Turn the heat down and simmer for 5 minutes. Remove from the heat and leave to cool.
Drizzle the glaze over the top of the cooled cake and allow to soak in before serving
