The recipeMung Bean Salad is an easy to prepare salad that makes full use of the great taste and texture of one of our favourite pulses. The flavour of the mung beans are complimented perfectly by the sweetness of the tomatoes and onions.
- 250g dried mung beans, soaked overnight
- 3 red onions, finely sliced
- 6 tbsp olive oil
- 3 tbsp red wine vinegar
- ½ tsp dijon mustard
- 1 small handful parsley, chopped
- 4 shallots, finely chopped
- 8 sun blushed tomatoes, finely chopped
Drain the mung beans that have soaked overnight, place in a saucepan and cover with cold water. Bring to the boil, reduce the heat and simmer for 30 minutes until soft.
Meanwhile, heat 3 tablespoons of the oil in a saucepan on a low heat, add the onions and fry for 20 minutes or until soft and lightly browned.
Put the remaining oil, red wine vinegar, mustard, parsley and shallots into a large bowl and add some salt. Add the cooked and drained mung beans, tomatoes and fried onions and stir all the ingredients together.
