The recipe

This mixed spice is used mainly in baking, most commonly known in Christmas cakes, Christmas pudding and hot cross buns. It is also often used with cooked fruits and sweet foods. There are similar mixes in countries other than Britain, for example in the US they have a spice mix called Pumpkin Pie Spice mix and in the Netherlands koekkruiden.

This mix can be bought ready made but it is very easy to mix up your own using pre-ground spices or, for a fresher version, using whole spices.  There are variations in the ingredients and quantities, but this is a typical recipe and the one I used in my Soul Cake recipe.


  • 1½ tbsp ground allspice
  • 1½ tbsp ground cinnamon
  • 1½ tbsp ground nutmeg
  • 1 tsp ground mace
  • 1 tsp ground cloves
  • 1 tsp ground coriander
  • 1 tsp ground ginger


Step 1

Just mix the spices together and store in an airtight container and keep out of direct sunlight, or preferably in a dark cupboard.
