Stuffed vegetables are popular in India and the stuffing itself can be quite varied, using many different vegetables and sometimes paneer. We make these Indian Stuffed Green Peppers a lot for weekday meals as they can be successfully reheated for lunch or a light supper. They are great served with chapatis and sambar.
- 6 medium sized green bell peppers
- 4 tbsp vegetable oil
- 1 tsp ground coriander
- ½ tsp garam masala
- ½ tsp chilli powder
- ½ tsp turmeric
- 10g fresh ginger, finely chopped
- 225g chopped mixed vegetables (carrots, cauliflower, peas and green beans)
- 1 medium potato, diced
- juice from ½ a lemon
- 2 tsp salt
- 250ml water
Put half the oil into a saucepan and gently fry the coriander, garam masala, chilli, turmeric and ginger for 2 minutes.
Add the mixed vegetables, potato, lemon juice and salt and cook for 15-20 minutes until the vegetables are tender while adding a little water if it looks too dry.
Cut the top from each pepper and remove the core and the seeds. Stuff the peppers with the mixture and close with the cut off tops.
Stand the peppers in a clean saucepan and gently fry in the remaining oil for 5 minutes. Add the water to the saucepan, cover and simmer for 15-20 minutes until the peppers are tender. Serve.
