The recipe

Green chutney is a good accompaniment to many dishes and is popular in northern India. The pistachio nuts help to thicken and bind the chutney.  Ground almonds would work as well. The mango powder acts as a souring agent to compliment the sweetness of the nuts. Tamarind or pomegranate could be used as a substitute.

Ingredients

  • 40g fresh mint leaves
  • 10g fresh coriander leaves
  • ½ clove garlic, roughly chopped
  • ¼ small onion, roughly chopped
  • ½ small green chilli
  • 12 pistachio nuts, chopped
  • ¼ tsp dried mango powder
  • 1 tsp lemon juice
  • 30ml water
  • salt to taste

Method

Step 1

Combine all of the ingredients in a food processor and purée until smooth . It will keep for a few days in the fridge, covered.
