Cajun Shrimp with Lima Beans is a dish originating in Lousiana where both shrimps and beans are popular and so putting both in one dish makes complete sense. The classic Cajun spice mix seasons it with deep flavour and a hot bite to add to the enjoyment. You could develop the recipe into something more substantial by adding chicken or a ham hock.
for the Cajun Spice Mix
1tsp ground cumin
1tsp ground coriander
1 tsp paprika
¼ tsp salt
¼ tsp black pepper
¼ tsp dried oregano
¼ tsp chili powder
Add the ingredients to a bowl and mix well.
- 1 tbsp vegetable oil
- 1 large onion, finely chopped
- 2 sticks celery, finely chopped
- 1 green bell pepper, finely chopped
- 2 cloves garlic, crushed and chopped
- large sprig of thyme, chopped
- 3 bay leaves
- 150g butternut squash, cubed
- 200g sweet potato, cubed
- 500ml chicken or vegetable stock
- ½ tsp shrimp paste
- 400g cooked lima beans
- 2 tsp cajun spice mix (see above)
- 350 g cooked shrimps or prawns
- 3 spring onions, sliced
Heat the oil in a pan, add the onions, celery and bell pepper and fry until soft. Add the garlic, thyme and bay leaves and cook for a further 2 minutes.
Add the squash, sweet potato, stock and shrimp paste and simmer, covered, for 15 minutes until tender.
Add the cooked beans and 1 tsp of spice mix and stir. Remove from the heat.
In a bowl, mix the prawns, spring onions and 1 tsp spice mix. Add this to the bean mixture, stir and serve.
