The recipeBulgur Wheat Pilaf is a wonderful mix of flavours and can be used as a side dish for a summery meal or eaten on its own as a light and refreshing snack served perhaps cold but preferably warm.
- 90ml olive oil
- 4 small red onions, thinly sliced
- 3 red capsicum peppers, deseeded and thinly sliced into strips
- 2½ tbsp tomato puree
- 1 tbsp caster sugar
- 2 tsp pink peppercorns
- 2 tbsp coriander seeds
- 100g raisins
- 400g bulgur wheat
- 400ml water
- 3 spring onions, thinly sliced crossways
- black pepper
Heat the oil in a large saucepan and add the onions and pepper. Cook gently for about 15 minutes until soft.
Add the tomato puree, peppercorns and coriander seeds and stir while cooking for 2 minutes.
Add the bulgur wheat and water, salt and pepper and stir while bringing to the boil.
Once the mixture begins to boil remove the pan from the heat and cover with a lid. Leave for about 30 minutes.
Separate the grains with a fork and add the spring onions before serving.
