The recipe

Bulgogi is a popular dish in Korea using thinly sliced beef which is marinated for a couple of hours to add flavour to the meat and to tenderise it.  This recipe pan fries the meat in the marinade, but it is usually cooked under a grill or barbequed over hot coals.

The cooked beef can be wrapped in lettuce leaves, served with rice or rice noodles and it also goes well with a little kimchi, a very popular Korean pickle (see our recipe for Kimchi).

Ingredients

  • 500g beef, sirloin or rib eye, thinly sliced
  • 5 tbsp sugar
  • 125ml soy sauce
  • 2 cloves garlic, crushed and chopped
  • 5 tbsp Mirin (or a sweet sake)
  • 2 tbsp sesame oil
  • 2 tbsp toasted sesame seeds
  • 80g spring onions, sliced in half and cut into 3-4cm lengths
  • 1 carrot, thinly sliced

Method

Step 1

Mix all of the ingredients in a bowl, except the carrots, cover and put in the fridge for 2-4 hours.

Step 2

Put the beef with all of the marinade and the carrots into a wok or frying pan and cook, stirring regularly until the meat is cooked to your requirements. Remove from the heat and serve hot.
