Bread Sauce is an old British recipe which was probably created in order to use up old bread. It is a savoury sauce, popular mainly at Christmas, and usually served with turkey.
- 1 small white onion
- 4 cloves
- 500ml milk
- 1 bay leaf
- 125g fresh or slightly stale white breadcrumbs
- 50g butter
- ⅛ tsp nutmeg
- salt and black pepper to taste
Peel the onion, cut it in half and stud with the cloves. Put the two halves in a pan with the milk, bay leaf, a twist of pepper and the nutmeg. Bring to the boil and then turn off the heat.
Add the breadcrumbs and stir in. Cover and leave for 1 hour, but you can leave for longer and finish the sauce just before serving if you wish.
Reheat to a simmer, then turn off the heat and stir in the butter. Season to taste and serve warm.
