Braising is a cooking method whereby a main ingredient is browned in an oil or fat and then cooked in a liquid. Braised Celery Hearts are cooked in this way. First the celery hearts are cooked in butter and then cooked in chicken stock, but you could use vegetable stock. The slow cooking in the stock deepens the flavour of the celery and makes it tender and the melted cheese enhances the flavour further as the celery does need a strong accompaniment. Serve with roasted meat or perhaps some pasta and a tomato sauce.
- 4 celery hearts
- 40g butter
- 2 cloves garlic, crushed
- 200ml chicken or vegetable stock
- 2 tbsp white wine vinegar
- 100g Stilton cheese
Preheat the oven to 180°C/ Gas Mark 4.
Prepare the celery by pulling off any leaves and cut away the base but leaving the sticks joined.
Melt the butter in a large frying pan and place the celery hearts into the pan. Fry for about 5 minutes over a medium heat, until they change colour. Turn occasionally to cook on all sides.
Remove the celery hearts from the pan and put them into an ovenproof dish. Add the garlic, vinegar and stock. Cover the dish with foil and bake for 40-50 minutes, until the celery is cooked and a little tender. Remove from the oven and drain the liquid from the dish. Crumble the cheese over the celery and return the dish to the oven for 5 minutes to melt the cheese. Serve, adding some of the liquid as required.
