Cwikla is a great way to enjoy beetroots. It looks amazing, tastes great with its horseradish tang and can be served as a relish or side dish with cold meats or salad dishes. Try it with the Polish sausage Wiejska.
- 400g fresh beetroot
- 2 tbsp horseradish sauce
- juice of ½ lemon (or ½ tbsp white vinegar)
- 1 tsp sugar
- pinch of salt
Wash the beetroots, leave on their skins and a couple of inches of root and tops to reduce the amount of colour leaking out.
Cook in boiling water until tender, about 1 – 1 ½ hours. Run the beets under cold water and when cool, cut off the roots and tops and peel the beets and grate them.
Place the grated beets in a bowl, add the lemon juice, salt and horseradish and mix together. Serve at room temperature or straight from the fridge.
