Healthy Greek Vegetarian Dishes
Greek cuisine is full of healthy Mediterranean ingredients such as olive oil, courgettes, aubergines, pulses and tomatoes, and flavoured with garlic and fresh herbs. Dishes are traditionally simple, but full of flavour and texture.
Mixed vegetable soups and casseroles are popular and filling and so are good for week day meals to balance out any excesses from the weekend. You can make up large quantities so that there’s something in the fridge ready to heat through when you get in from work or take to the office in a flask for lunch with homemade pitta bread. You can add black olives and little cubes of white cheese (such as feta) for extra flavour.
Herbs are really important for flavouring and make the dishes look stunning and healthy, contrasting well with the beautiful colour of the tomatoes. Popular herbs include oregano, mint, dill, basil and thyme. Try to use fresh herbs whenever possible, but dried herbs will add flavour if fresh herbs aren’t available.
